Parathas with LEFT OVERS (I) : Dal Parathas : Lasooni Dal Palak and Urad Dal Paratha

I have a self proclaimed fame to be the Leftover cooking Queen of my two member family :D


Ok that was no PJ, i love making parathas, be it stuffed or plain, with leftover dry veggies or some dal, its fun, easy and super delicious. You must have heard of dal parathas, where one kneads the flour with a dal and no water. Yes one more form of missi roti apart from the my previous one from scratch. Iam a fan of this kind of parathas, swati ka dal wala paratha series is what anna calls it, and yeah i can make parathas like this anytime, and i love them, they are so soft and so tasty.

I love parathas but i need something different in plain parathas too everytime. So my plain parathas will not be all that plain, i love ajwain ka parathas, it keeps it plain and simple but still makes it special. Iam sure most of you make these parathas, all you need to do is add some salt, ajwain(carom seeds) and some chat masala while kneading the dough.

Bihari SATTU Ka PARATHA (Sattu Roti) with Baingan ka Bharta



I am not sure how many of you have had sattu, its a flour made from roasted chana, thats what i had known since childhood, many would ask me that whats the difference between sattu and chana, ok iam not too sure, and dont want to dwell into it much, all i know is i love sattu for its different taste, believe me its not besan :). Sattu is one important, full of fibres, and nutritious food, which was once one sasta and healthy food for farmers in bihar, one glass of sattu mixed with water salt or sugar and lime, believe me its one energizing and filling drink, and today its a favorite for one to all in Bihar at least. Believe me people you ought to try it.

Amma was and will remain one lady who was a south indian and could cook the best best best north indian cuisines, well might sound a bit too i dont know what, but seriously i have never seen any other south indian atleast in my family to cook north indian food with such perfection. And yes she was one master in parathas, as a kid i was very ignorant to different kinds of cuisines, i never knew what was south indian and what was north indian, all i knew was what amma cooks is south indian, i was never too fond of outside food then, i would crave for food cooked by amma. If i try to recall now, we had hardly visited restaurants with amma and we hardly missed it, coz we were so so happy with her food. The impact of those yesteryears is so strong that till date i prefer home cooked to outside food, eventhough my cooking is nowhere near ammas.

Street food is like ultimate moksha to me, however depressed iam , feeling low, one thought of pani puri or chat or any street food brings a sparkle in my eyes. To top the list would always be Pani puri or golgapas or puchkas .. however you call it, the ultimate street food.
