Authentic Punju ALOO GOBI and Beckham Paji...

Has Swati gone mad.. these weird titles are becoming a habit to her.. now what does she mean by Beckham paji here... well well well are these the thoughts fluttering in ur minds right now.. :) for a sec it struck me too.. so u r totally justifies(all that occurs in great minds like mine are totally justified.. i dont mind justifying the rest too ;)) OK iam sure many of you mite have guessed it the minute you read it.. Yes remember the much famed and acclaimed Bend it Like Beckham.. with the tagline "why cook ALOO GOBI when you can bend it like beckham"... yeah This Book Makes me Cook event hosted by my fellow Recipe Marathon by Bhags.





This is one of my favourite movies...
This movie is about Jessminder Bhamra's journey to the football fame from kick-abouts in the park to freekicks in the Final. Its about this football freak who knows how to bend that big ball like beckham from this orthodox Punju family who feel that instead of running around in shorts chasin that stupid ball.. she should instead be clad ni a traditional salwar kameez and should learn how to cook the authentic punju delicacy ALOO GOBI to gain points in the eligibility for a indian guy.:)) love this movie.. the family and every min of the movie. So this is one movie which makes me cook aloo gobi... coz i cannot bend it like beckham .. sorry beckham pajji.. :D

Well one doesnt need a reason to cook aloo gobi .. me and garg and luckily everybody i know are really fond of aloo gobi and love it d same way as my first time .Luckily i have learnt it from my mumma(mother in law) d authentic punju style aloo gobi.. i always used to wonder that my aloo gobi doesnt come like that ... but ever since i learnt the trick .. mine is a hit too... :) and its so quick .. Another unique and spicy aloo gobi variation that amma used to prepare hasnt been replicated by anybody yet.. i have tried it twice but was kind of disappointed, that was one such dish when she used to prepare .. d most sophisticated would lick their plate till the last spot of it. I promise the day i will be able to prepare something near to that one.. i will surely post that version. So here goes mummas punju version:D


Ingredients:

1 big cauliflower
2 big potatoes
3 onions sliced into 1 inch long slices.
1 tsp ginger finely chopped
2 tsp cumin seeds
2 green chillies slit lengthwise
2 tsp coriander pwd(dhania)
1 tsp turmeric pwd
salt to taste
1 tsp chilli pwd
1 tsp kitchen king (optional)



Method:

1. Cut medium sized florets of cauliflower and 1 inch cubes of potato as shown in the pic. Cut onions sliced lengthwise and then just one slit in d mid.
2. Heat some oil(2-3 tbsp) in a kadhai and when heated, add the potatoes to it and fry till it is fried well , brownish.
3. To this add the onions and ginger, fry till the onions become light brown. Now add the florets and stir for a minute. Once the florets have some oil on them , add all the spices and stir till it is spread consistently over all. Cover the pan and let it cook for 5 mins over medium flame.
4. Remove the cover in between and stir, dont add any water and keep stirring occasionaly to make sure it doesnot stick. In some 15 minutes the aloo gobi is ready.



Variations:

You can even add half a bowl of peas at the time you add the onions, as i did.
You can even add tomatoes, but authentic aloo gobi dosnt have tomatoes.
Ginger is optional.
You may fry both aloo and gobi seperately and add the fried florets at that stage, even this tastes great, amma used to do this in her version, but her masala was different. Will post that someday.
